Caesar Salad Dressing

This dressing is simple to make and contains all the flavors of a traditional caesar dressing. However, this dressing has a balsamic base instead of mayonnaise or creamy base. This caesar dressing still has the anchovies, garlic and other common caesar dressing ingredients. So yummy and a great change up from creamy caesar dressing. And most importantly, don’t forget the parmesan cheese!!

1 batch makes enough for 2 heads of lettuce! Or feel free to store dressing in the fridge for up to a week!

Ingredients:

1/2 C olive oil

1/4 C balsamic

1 T lemon juice

12 anchovies (allow the fish oil from the filets to drip into the dressing mixture)

3 medium whole garlic cloves

1 tsp dry mustard (optional)

1 T water (more if consistency is too thick)

pepper to taste

Parmesan cheese to add to salad at end

Directions:

  1. Combine all ingredients in cup for hand blender or small food processor.
  2. Blend until combined. If too thick, add a splash of water.
  3. Sprinkle cheese and dressing over romaine lettuce. Add croutons if desired. Toss and serve!
