Overnight oats are a great way to start the day! They are easy to make and such a fulfilling, hearty and nutritious breakfast that you can easily take on the go. I like to line up my containers and make a bunch at once so then I am all set for the week. Overnight oats are packed with protein and whole grains to keep you full and fuel you for the morning. They are also a good change from the usual breakfast bar or yogurt parfait. Overnight oats can be customized to any flavors you want! I like this carrot cake version because the carrots add an extra crunch while adding veggies. With the cream cheese and spices it really creates a carrot cake taste! The carrots also bulk up the oats so it feels like you are eating more. Making different flavors is fun and keeps things interesting each morning during the week. This version is a must try for breakfast!
Ingredients
1/2 C oats
1/2 C unsweetened almond milk
1/2 C plain greek yogurt
1 packet stevia (sweetener of choice)
1 tsp vanilla extract
1/2 tsp cinnamon
1 T chia seeds or flax
1/4 tsp cloves (optional)
1-2 T low fat cream cheese
1 carrot, shredded
2 T rasins
**For a different flavor combine the ingredients except for the cloves, cream cheese, carrot and raisins and add your favorite fruit, nut butter, nuts or spices!
Directions:
Combine all ingredients in a mason jar or well-sealed container. Stir and refrigerate overnight (for at least 6 hours).
