Chickpea Cookie Dough

Healthy but also delicious. This can definitely fulfill your sweet craving but is very filling so you don’t have to eat too much of it. Instead of putting in whole chocolate chips I like to make chocolate shavings with a hand blender. That way you can use less chocolate chips but have them be more dispersed in the cookie dough! The shavings also help eliminate the chickpea taste. Enjoy!

Ingredients:

1 can (15.5 oz) or 1.5 cups of chickpeas

1/4 tsp salt

1.5 tsp vanilla extract

1/3 cup sugar of choice (i use half brown sugar and half coconut sugar)

1/4 cup peanut butter (or any nut butter of choice)

1/4 cup almond milk (can use soy or regular milk)

1/4 cup oats

1/4 cup chocolate chips


Tip: Make this cookie dough almond flavored by replacing the peanut butter with almond butter and adding 2 tsp of almond extract!

Directions

1. Add all ingredients except chocolate chips into a blender or food processor and blend until slightly smooth

2. Shave the chocolate chips with a hand blender or small food processor. Mix chocolate in with dough.
