This chicken is perfect for the summer or any time of year. It’s great on the grill and is easy to make and has great flavor. A little acidic from the balsamic but full of flavor and richness at the same time.
1/4 C balsamic vinegar
2 T Dijon mustard
2 T lemon juice
3 garlic cloves (minced)
2 T olive oil
1 T Italian Seasoning
salt and pepper
1 pound thin sliced chicken breasts
**I like to use sweet balsamic vinegar to give the chicken a little more richness and flavor rather than too much acidity
- Heat grill and then set to high-low-high
- Put chicken in a plastic bag and add all of the ingredients to the bag
- Close the bag and mix all of the ingredients around so that the chicken is coated in the marinade
- Grill the chicken on High-Low-High for 2 min, then flip the chicken and sear with marinade again and turn grill down to medium-off-medium for another 5 minutes or until fully cooked
Pair this with some grilled seasonal veggies and rice for a nice balanced meal!
