Balsamic Chicken

This chicken is perfect for the summer or any time of year. It’s great on the grill and is easy to make and has great flavor. A little acidic from the balsamic but full of flavor and richness at the same time.






1/4 C balsamic vinegar

2 T Dijon mustard

2 T lemon juice

3 garlic cloves (minced)

2 T olive oil

1 T Italian Seasoning

salt and pepper

1 pound thin sliced chicken breasts


**I like to use sweet balsamic vinegar to give the chicken a little more richness and flavor rather than too much acidity



  1. Heat grill and then set to high-low-high
  2. Put chicken in a plastic bag and add all of the ingredients to the bag
  3. Close the bag and mix all of the ingredients around so that the chicken is coated in the marinade
  4. Grill the chicken on High-Low-High for 2 min, then flip the chicken and sear with marinade again and turn grill down to medium-off-medium for another 5 minutes or until fully cooked

Pair this with some grilled seasonal veggies and rice for a nice balanced meal!
