Frosted Southern Brownies

This recipe has been in my family for years and has been tweaked to perfection. The original recipe is from my Aunt Alice who grew up in the south. These aren’t the most healthy brownies but they are absolutely delicious if you want to splurge. Sometimes you have to go with your craving and just get it out of your system. These brownies are more cake-like and less fudgy, but they still have an abundant chocolate flavor. The coffee helps to bring out the chocolate flavor and the icing puts the perfect sweetness onto the brownie. For brownies with frosting this recipe does not take long because the brownies only bake for 20 minutes and the frosting can be made while the brownies bake!

Baking tip: I like to use convection bake on my oven instead of regular bake. I preheat the oven to 25 degrees less than what the recipe says and also decrease the cooking time by 5 minutes. This gives a more cake-like quality to baked goods.

Ingredients for brownie:

2 C flour

2 C sugar

2 sticks butter

1 cup coffee

1/2 C cocoa powder

1/2 C milk + 2 tsp white vinegar (or 1/2 C buttermilk)

2 eggs

1/2 tsp salt

1 tsp baking soda

2 tsp vanilla

As far as ingredients go my favorite vanilla extract to use for everything is Penzeys Double Strength Pure Vanilla Extract. The extra vanilla blends all of the flavors and spices really nicely in any baked good and adds extra vanilla flavor!

Directions for brownie:

  1. Preheat oven to 400 degrees (or 375 for convection)
  2. Grease a 8 1/2 x 11 baking pan
  3. Mix flour and sugar
  4. Melt butter in saucepan. Then add coffee and cocoa and heat until boiling
  5. Pour over flour mixture
  6. Add milk/vinegar, eggs, baking soda, vanilla and salt and mix well
  7. Put mixture in greased pan and bake for 20 minutes (15 for convection) until toothpick comes out clean

Frosting Ingredients:

1/2 C butter

4 Tbsp cocoa powder

1/4 C milk

3 1/2 C powdered sugar (1 box)

2 tsp vanilla

1/2 tsp salt

Frosting Directions:

  1. Combine butter, cocoa powder and milk in saucepan and heat until boiling
  2. Pour heated mixture over powdered sugar in a bowl
  3. Add vanilla and salt and mix. If frosting is too thick add more milk by the tablespoon

FROST BROWNIES WHILE HOT!!
