Chicken salad is great to use with any leftover chicken or turkey that you might have in your fridge! So don’t throw it out because it can be put to good use! This salad is easy and is a healthier option compared to a mayo based salad. The avocado provides richness and creaminess that you would normally find in a mayo based salad. Additionally, the avocado provides healthful nutrients such as unsaturated fats, fiber and potassium! Sometimes I like to buy the cooked rotisserie chicken at my local supermarket and I use that for my chicken base. Chicken salad is also convenient to use for any chicken that is overcooked, dry or has a bad taste. This recipe can help mask flavor or texture problems and prevents food waste at the same time!
Ingredients:
2 pounds of chicken-shredded or cubed
1 Lime-juiced
1 T cilantro-rinsed and chopped
1/2 purple onion-chopped
1 C fresh tomato-cubed
1 Avocado-cut into chunks
1 T Olive Oil
1/2 tsp garlic powder
salt and pepper to taste
Hot sauce or red pepper flakes (for additional spice)
Directions:
1.Shred or cube chicken and put into a medium sized bowl.
2. Add all ingredients and mix well. Add more lime or olive oil to achieve desired texture. Should be slightly creamy once mixed thoroughly. Add any additional spices you want to make it your own!
This is exactly what I’ve been looking for! I’ve always hated the taste of mayo but chicken salad is soooo good 🙂
