Chia Seed Pudding

Chia seed pudding is the perfect healthy addition to the diet! You can make it right before you go to bed and it will be ready in the morning! Chia seeds are also rich in fiber, protein and magnesium. Chia seeds are perfect for pudding because they absorb moisture almost like tapioca balls, which allow them to make an excellent pudding consistency. Chia seeds have a very mild taste which allows some creativity when making the pudding! Chia seeds can also be added to yogurt for extra nutrients and crunch.

I put the classic recipe that serves as a good base and then some variation ideas following. Recently I’ve been into mason jars to store food and put beverages and cocktails in. Mason jars are perfect for this pudding because you can make it and store it right in the same mason jar!

Ingredients:

1 C Unsweetened Almond Coconut Milk

1/4 C Chia seeds

2 tsp vanilla

1/2 tsp cinnamon/pumpkin pie spice

1 packet artificial sweetener (if want a little sweet)

 

Alterations:

-Add 1/4 C pureed fruit (berries work nicely)

-Add mint instead of cinnamon with some blueberries to give it an earthy feel

-Add 1-2 T nut butter

-Add 1 scoop of your favorite protein powder to make it the super chia pudding!

Directions:

1. Combine all ingredients together in a bowl or mason jar and stir immediately (if not stirred immediately the chia seeds will clump together!)

2. Put in the fridge for 1-2 hours. Then give it a stir to make sure the chia seeds did not sink to the bottom.

3. Pudding should be ready in another 4-6 hours. Consistency should be thick and gel-like.

 

Tip: If pudding is too liquidy I would suggest putting in less almond milk next time. But don’t let this discourage you from making this recipe again!
