This marinade is perfect for any kind of veggies! My favorite veggie to grill, although hard to find, is purple and white eggplant. It is tasty like eggplant but has a lighter taste to it! Some other veggies that are good with this recipe are peppers, onions, squash, brussel sprouts and zuchini! The key is using quality spices. I personally like to use Penzeys spices because they are excellent quality spices and bring great tastes to dishes.
Ingredients:
1/4 Cup Olive Oil
1 T Penzeys Italian Seasonings
2 T Dijon Mustard
1 T minced garlic
Salt and Pepper
Directions:
1. Preheat oven to 400 degrees or light the grill on high heat
2. Cut desired veggies and put in a zip lock bag.
3. Put all of the ingredients into the bag with the veggies.
4. Mix around in the bag.
5. For grilling:
Turn grill down to high-low-high. Put veggies on grill for about 5 minutes or until cooked. Then flip to other side for 2 minutes more or until done.
For baking:
Put veggies onto baking pan and put into heated oven and bake for 20 minutes. Then mix veggies around and bake until tender and slightly brown.
Tip: You can pre-marinate in advance! Veggies can sit in the bag with the marinade for up to 24 hours!
